In Short: This masterclass welcomes four renown chefs from coast-to-coast with varying cultural backgrounds who will each bring you a recipe that you could make at home. The host of the event, a former chef and experienced mushroom forager, will be passing on your questions to our chefs as they walk us through their recipes and give us some insight into their culinary and cultural backgrounds.

Cooking With Mushrooms: Mushrooms present a particular challenge to most due to their high moisture content and particular texture. What’s more they have a somewhat robust, yet somehow subtle, flavour. Mushrooms aren’t just for frying, join us as our chefs cook up a variety of dishes using the humble mushroom.

Why Mushrooms? Mushrooms are quickly becoming a hot ingredient due to their minimal calories, high protein content and amazing dietary fiber. They are also notably high in various nutrients including iron and Vitamin D – the ‘happiness vitamin’. Due to their protein content and nutrients, mushrooms are known as a great substitute to meat. Beyond this, mushrooms have been known as an excellent ecological and sustainable food item. It is recommended to eat mushrooms as often as possible.

About our Chef Instructors:
Paul Moran is a chef, forager, freediver, and entrepreneur. He learned to pick morel mushrooms in the foothills of the Okanagan Valley at age 12, and has been trailblazing paths in both foraging and culinary circles since. He won the Foot Network’s Top Chef Canada in 2019, and has worked in celebrated restaurants in Canada and abroad. Alex Blagdon is chef and instructor at The Alder Cottage in Tors Cove, Newfoundland & Labrador, where she cooks with local ingredients, including food she forages with her students. She is a Taste of Place Ambassador with Adventure Canada, and an Ambassador for Lululemon. In 2020, she was recognized by The Globe and Mail as one of Canada’s Next Star Chefs. Lori McCarthy is a chef, cultural food ambassador, educator, and storyteller. Lori McCarthy identifies fiercely as a Newfoundlander, which means more than just geographical location of birth to her. Her passion for the land is matched only by her passion for food culture. The Globe and Mail recognized her in 2019 as one of Canada’s Next Star Chefs. Author of Food, Culture, Place. Zach Keeshig is head chef and owner of Naagan, where Zach fuses his cultural Ojibwe cuisine with modern culinary techniques and ingredients. He focuses on locally grown and foraged ingredients. From Owen Sound, Ontario, Zach apprenticed under Chef Tim Johnston at Cobble Beach, and has since worked in restaurants such as Michael Stadtlander’s Eigensinn Farm and Langdon Hall. Robert Courteau is a former chef whose culinary background led him to Europe, where he first began foraging for mushrooms and other wild edibles. Now based in Ottawa, Robert is the founder of Think Fungi, an online hub ‘for all things mushroom’. His mission is to educate the public on the wonders that lie beneath our feet through online and in-person events, educational courses, and other projects. This event has limited spots, and you must register in advance via Eventbrite. One sign-up covers one device.

Immediately after registering, you will get a confirmation email that contains the Zoom meeting log-in information.

After class, you will receive a recording of the event, as well as a folder of recipes and resources that we discuss during the event. Class recordings are available to all registered attendees for two weeks following each event.

Payments for this live streamed class is non-refundable. If you find yourself unable to attend, you may transfer the ticket to someone else, but we are unable to refund fees and all payments are final. Classes are subject to cancellation at any time. In the case of cancellation by the event organizer, all paid tickets will be fully refunded.
