Starbucks is starting the year by adjusting its menu to reflect how many customers ease back into routine after the holidays. The winter lineup blends familiar flavours with new additions, placing noticeable emphasis on protein-forward drinks, seasonal pistachio offerings, and a small refresh of bakery items and merchandise.

New menu rollout across Canada begins January 6, with several beverages joining the permanent menu and others returning for a limited time.
Protein drinks, in particular, are positioned as flexible options that can be ordered hot or iced and customized with either classic caramel or a new sugar-free caramel syrup.
Pistachio also returns, anchoring several drinks that pair the nutty flavour with brown butter notes.
In addition, Starbucks is introducing its own take on the widely shared matcha-and-chocolate pairing, blending pistachio, chocolate, and espresso.

- Iced Brown Sugar Cream Protein Matcha — Unsweetened matcha topped with brown sugar–flavoured protein cold foam, delivering 24 grams of protein in a grande.
- Caramel Protein Matcha — Matcha mixed with protein-boosted milk and caramel syrup, offering 28 to 32 grams of protein per grande, served hot or iced.
- Pistachio Latte — Back for a limited time, joined by new variations.
- Pistachio Cortado — A shorter espresso-based option featuring pistachio and brown butter flavours.
- Pistachio Cream Cold Brew — Cold brew topped with pistachio cream cold foam.
- Pistachio Frappuccino — A blended option built around the same flavour profile.
- Iced Dubai Chocolate Matcha — Matcha combined with pistachio sauce, milk, chocolate cream cold foam, and a salted brown-buttery topping.
- Iced Dubai Chocolate Mocha — Espresso, chocolate mocha sauce, and milk over ice, finished with pistachio cream cold foam and the same topping.
The pastry case also features the return of the Valentine Cake Pop and Heart Cookie, along with winter merchandise featuring Lunar New Year and Valentine’s designs.
