While their culinary backgrounds differ, Del Frate and Williams share a common philosophy: a deep respect for seasonality, sustainability, and ingredient-driven cooking. At Radici Project, Del Frate explores the intersection of Italian and Japanese culinary traditions through Itameshi, a style of cuisine rooted in precision, restraint, and cultural exchange. At Joni Restaurant, Williams leads a refined farm-to-table program built around local sourcing, in-house production, and contemporary techniques that honour the integrity of every ingredient. Together, the chefs will present a menu that explores how exceptional ingredients can be interpreted through distinct culinary perspectives.

More than a traditional chef collaboration, the dinner offers a rare opportunity to experience two of Toronto’s most thoughtful culinary voices working side by side. Drawing from decades of experience across Europe, Japan, and Canada, Del Frate and Williams will create a menu shaped by the best ingredients of the season, reflecting both their individual journeys and their shared commitment to craftsmanship.

Guests may choose between the Essence Menu ($120 per person, plus tax and gratuity) or the Immersive Menu ($195 per person, plus tax and gratuity), with optional alcoholic and low-proof beverage pairings available for an additional cost.
