A new menu item is arriving just ahead of the May Two-Four long weekend, and Smoke’s Poutinerie is framing it as a rethink of a familiar comfort food.

The chain is introducing the Boneless Rib Poutine, a permanent addition built around a simple idea that ribs do not need a bun. The launch is timed to coincide with the unofficial start of summer, when backyard barbecue flavours tend to take centre stage.
The dish layers several components that lean heavily into that theme. It starts with hand-cut fries and cheese curds, topped with the brand’s signature gravy. From there, it adds boneless rib meat, finished with 40 Creek BBQ sauce, along with diced onion and dill pickles for contrast.
The company describes the result as smoky and messy, intentionally leaning into bold, sauce-forward flavours rather than a more contained sandwich format.
The Boneless Rib Poutine becomes available starting Friday, May 15. It will be offered at Smoke’s Poutinerie street locations across the country and through third-party delivery platforms.
