One of the newest pop-up dining experiences in Edmonton is also a chance to turn the entire meal into the evening’s entertainment.

I was invited to try the 4 Elements Dinner at the Airport’s HALO Bistro, an immersive dining experience where the five courses take centre stage. It is a culinary treat, and an opportunity to view food in a whole new light. The experience immerses diners through a vibrant, colourful, and eye-catching display of video projections which help to make it a lively experience from the welcome cocktail to dessert.
The experience begins the moment you are seated at your table among the upscale décor and within some rather comfy chairs. There are trinkets, moving pieces, the amuse bouche course, and a welcome cocktail or mocktail, all neatly set. All of these tabletop pieces help to create the immersive feeling right away.

There will be a few minutes between being seated and the staff making their quick introduction; during this time, there is an air of mystery building around the trinkets at the table, the décor, and the show’s overall story. You’ll begin to wonder what these things set at your table are for, and how they will play into your meal. As you wonder and settle on drink orders, the lights dim, and the show begins.
Without any real spoilers, the whole show and story centre around the four elements of earth, fire, water, and air. These elements are the names of the four main characters in the show, which is presented over projection displays and audio effects. Those elements/characters also represent four of the meal courses.
Throughout the story, the 4 elements are competing against one another for the throne of Oceana, and each course is the element’s “offering.”

As the show goes on, each trinket, drink, or edible item at the table is part of the story or has meaning in the story of the 4 elements. And at first, it will seem as though the projections or audio effects will be the main entertainment. However, the incoming courses are presented in a way that get people oohing, aahing, and reaching for their phones. A few of the courses come slightly deconstructed; this felt like a plus, as we could customize our salads, sliders, and desserts, to our liking.
Some of the immersive parts of the experience come from those courses that you’ll build, such as the Starter (Earth) and the Entrée (Fire), while other parts of the immersion are created through how the projections interact with the tables, trinkets, food, or table décor. And while the show doesn’t really take breaks from the immersive experiences, guests are provided with an intermission.

As the food is served, the show is impressively well-timed to allow plenty of time to enjoy each course. And we were left quite full by the end of the meal for a couple of one who ordered from the regular menu, and one who ordered from the vegetarian menu.
The entire experience takes about two-hours and is an excellent way to treat children for something like a birthday, or a successful school year. There were kids in attendance, and they were equally as impressed by the presentation as the adults.
Overall, the 4 Elements Dinner offers something different and elegant for any special occasion or dinner date. The experience does come with a high price tag. So, for those willing or able to spend the money on a unique and immersive culinary experience, that ticket price includes top-notch service from attentive staff, on-site parking, high-quality and filling food, and a delightful way to socialize over dinner and a show.

Parking is available at the hotel’s guest parking lot beside the main entrance. You’ll need to get a ticket at the gate, but all 4 Elements dinner guests will have the cost of parking included in their tickets. Staff will hand out validated tickets at the end of the show.
Drink orders can be made when you book purchase tickets online. The wine and cocktail pairings offer a great value when you compare the package price to the price of an individual glass of wine or a cocktail.
