Ficoa’s acclaimed zero-waste culinary series returns this winter, with a spotlight on one of Canada’s finest beef offerings—Prince Edward Island Certified Beef. On Wednesday, January 9th, from 6:00 PM to 7:30 PM, Chef Gerry Quintero will showcase his mastery of sustainable cooking through an indulgent event featuring this tender, flavourful, and hormone-free beef, raised on the island’s nutrient-rich pastures for just $33 tax inclusive.

A warm welcome awaits guests with a signature beef fat-washed cocktail, paired with a savoury beef jerky snack—setting the stage for an evening of elevated dining and sustainability. The night’s menu will highlight the exceptional quality of PEI beef, beginning with a starter of onion broth and carpaccio, followed by the main event: a perfectly prepared steak with mashed potatoes and jus, all designed to bring out the rich, natural flavours of the beef.
