New Year’s Eve Dinner

Starters include Cauliflower & Truffle Velouté with microgreens, Seared Sesame Crusted Ahi Tuna with a spicy ginger dressing, Salmon Ballotine with pickled vegetables, and a Beet Salad with goat cheese and citrus mint vinaigrette. Wine pairings such as Chardonnay, Pinot Noir, and Prosecco are available.

The intermezzo features a refreshing lemon sorbet with vodka, lavender soda, and flower petals.

For the entrée, choices are Herb Crusted Lamb Rack with a Shiraz demi-glaze, Filet Oscar with lobster and merlot demi-glaze, Arctic Char & Prawn with champagne beurre blanc, and Butternut Squash Gnocchi in a sage butter cream sauce. Accompanying wine options include Cabernet Sauvignon, Sauvignon Blanc, and Merlot.

Dessert choices are Red Velvet Chocolate Pate with cream cheese mousse and a selection of ice wine or Tawny Port.
